Manufactures of bread and bun products need a way to ensure that the overall colour of their products are the same from lot to lot.
Production changes can alter the base colour and appearance and the consumer predominately perceives:
· Dark products to be burnt or overcooked
· Light products to be undercooked
· An off colour product may perceive that the product is defect.
